Prepare food for service occupations Describe jobs, training, and expectations of the food service industry. Safety and sanitation Practice personal hygiene, prevent food spoilage and contamination. Practical utility operations, food preparation tools Operate and clean dishwashers; select tools and measuring equipment; operate grills, fryers, slicers. Clean, prepare, cut and store vegetables and fruits Prepare breakfast dishes Prepare eggs, pancakes, cooked cereals, potatoes, and meats. Prepare salads and dressing Make potato, green and macaroni salads; prepare cooked, French oil/vinegar dressings. Prepare sandwiches and frozen foods Identify breads, slice meats/cheeses, heat frozen foods, use decorative toppings. Prepare meats and fish Identify and cook pastas/legumes/potatoes; make white, brown and tomato sauces. Prepare pastas, dry legumes, other starches and sauces.
